RAW VEGAN ALMOND FLOUR DOUGHNUTS
Makes about 8–10 small donuts
Donut dough
2 cups almond flour
1 cup soft Medjool dates, packed
3 tablespoons date syrup
2 tablespoons coconut sugar
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon sea salt
Optional but HIGHLY recommended: 2–3 tablespoons coconut flour if the dough is too sticky.
Pulse the dates in a food processor until they turn into a sticky paste.
Add almond flour, date syrup, coconut sugar, coconut oil, vanilla, cinnamon and salt.
Process until everything starts sticking together like a soft cookie dough.
Grab a little dough and squeeze it. If it holds its shape, she ready. If she is wet and acting crazy, add coconut flour 1 tablespoon at a time.
Press the mixture firmly into silicone donut molds.
Freeze for about 30–45 minutes, then pop them out.
You can eat them straight from the freezer after letting them soften for a few minutes, or keep them refrigerated for a softer donut.
MAPLE COCONUT ICING
½ cup thick canned coconut cream
3 tablespoons maple syrup
½ teaspoon vanilla
Tiny pinch sea salt
Whisk everything together until creamy.
If your coconut cream is very soft, refrigerate the icing for 20–30 minutes before dipping the donuts.
Dip the chilled donuts into the glaze, then refrigerate or freeze them again until the icing firms up.
For an icing that HARDENS more: add 2 tablespoons melted coconut butter or 1 tablespoon melted coconut oil to the glaze.

You could take the exact same base and make a whole raw donut box:
Strawberry Hoochie
Add freeze-dried strawberry powder or blended strawberries to the coconut icing.
Chocolate
Add 2 tablespoons raw cacao powder to the donut dough AND/OR icing.
Cinnamon Roll
Add extra cinnamon to the dough and sprinkle coconut sugar + cinnamon over the glaze.
Maple Caramel
Mix date syrup, maple syrup, vanilla and a tiny pinch of sea salt for that brown glossy glaze.
And because these are made with almond flour & dates instead of flour, yeast and white sugar, they’re dense and rich. One little donut is going to EATTTT. 😭
